In Between Things


After spending several unemployed weeks watching Top Chef, I made this for dinner tonight. And it was actually very good. So good, that I've decided that once I finally (finally) find a job and a place to live - I will institute a weekly night for cooking thoughtful food. And I will invite all of my friends over, and it will be lovely. (I'll have to make some friends first too).

My sister, who is graciously letting me be a bum in her guest room instead of on the streets, complains that I don't blog anymore. I know, I know. I need to write something.

But the truth is - there's just not much to write. I am so very in between right now. In between jobs, homes, friends, churches, cultures... It's like I'm traveling from one planet to the next, and once I arrive I'll have plenty to say about a whole new environment, culture and people; but the journey itself is just a lot of empty space.

Not that life is completely devoid of interest right now. Emma started Kindergarten on Monday. Here's a photo of the two of us on her first day of school.



She was so excited. I think she only realized today that this was going to be her life for a long while. After school, she came home exhausted and said, "I have to go to school all day, every day except Saturday and Sunday. Those are my only two days for my peace and rest." Poor baby girl. I didn't know what to say, except that everybody in this country works all day, five days a week...

The only real consolation I could give was that someday she might get lucky enough to be unemployed and homeless like her favorite Aunt Amy, and then she could get all the rest she could want and then some.

It's a waffle, with refried beans, a drizzle of syrup, muenster cheese, ham, an egg, and parsley. Sounds weird, but is surprisingly good - and pretty healthy.

I was doing okay with the waffle/refried beans until you said syrup..... as in maple? How was it?
